After the hard manual harvest is made, and inmediatly after the destemmed, there is a cold maceration in order to extract all the aromatic potential from the skins. With authoctonous yeasts the fermentation is started, always controlled and not exceeding 26º. Pumpings and delestages take place daily. Once the malolactic fermentation is finished after some days, the standard wine-making process finishes and wine rests in bottle for 2 months before being launched to market.
