From selected 40-year-old vines located berween 400-500 mts above the sea level, this is an aged Crianza selected from low vines production in order to achieve the maximum quality. It is aged 18 months in French and American oaks, preserving the unique features of the terroir and the Tempranillo as well as adding vanilla hints, coffee, honey and balsamic elegant notes.Excellent for cheeses, meats and blue fish. To be served between 14º-16º.
The control of maturation is made since August and the harvest is made manually by night in October selected from low yielding vines to create a wine to lay down. The alcoholic fermentation is made at a controlled temperature of 25º preserving the innate organoleptic aromas of the variety. After the malolactic fermentation, racking is made and both Tempranillo and Graciano are blend and aged together in American oaks for 12 months and in French oaks in order to complete the polishing of the wine. This aging gives the wine made of wood and toast, plus graded doses of oxygen through your pores, which give roundness, maturity and stability .Daily battonage is made when aging. After clarification, filtering and bottling,wine rests in bottle for a minimum of 6 months before being launched to market.
